Salmon filets skin on 2-4
Can substitute halibut or scallops
Sauce:
1/4 c. Lime juice with zest
2 T. Fish sauce
1 clove garlic minced
1 Serrano thin slice
1 T. Maple syrup
Fresh chopped cilantro
Salt

Directions:
Directions:
Pat fish dry and season with salt and pepper (can refrig for a bit)
Make sauce: Mix all ingredients and season with salt.
Let fish come to room temp for 30 min.’
Fry pan med high heat, then heat oil 1 T. Add fish skin side down 4-5 min, turn and cook another 2-4 min.
Serve the salmon (or halibut or scallops) . Can remove salmon skin (to enjoy) then top salmon with the sauce and serve remaining sauce on side. (Will be spicy)
