Nana's Baked Beans Recipe

2 lb navy beans
1 ½ C brown sugar
1 Tbs salt
1 tsp dry mustard
½ tsp ground cloves
5 oz fat salt pork (score top)
1 onion

Rinse beans and soak over-night in 12 cups of water

In the morning, check beans to be sure they are still covered with water. If not, add more water until it is about 2-3 inches above beans.

Place over heat and bring to a boil.

Reduce heat and simmer approximately 1 hour. To test if the beans are done, remove a few with a slotted spoon. Gently blow on the beans. If the skin cracks, they are done.

Remove from heat and pour off liquid, reserving in a separate container.

Peel onion and place in bottom of crock-pot or ovenproof ceramic pot along with the fat salt pork. Pour beans over top.

Mix dry ingredients with 2 cups of the reserved liquid. Pour over beans. Use reserve liquid as needed to bring level up to the top of the beans.

Cover and cook on low in crock-pot or 250º oven for 10-12 hours (Save cup of liquid for later in case beans get dry.) If cooking in crock-pot, it is best to place in the oven the last 2-3 hours to brown the beans. If needed, remove lid to thicken. If beans are too dry add reserve liquid as needed.

**Suggestion: Begin cooking a day before you plan to serve them and cook about 8 hours. The next day, put them in a 350º oven until bubbly, then reduce heat to 250º and cook the remaining time (an additional 2-3 hours) to brown before serving.
