2 medium zucchini
1 lb sausage meat (pork in bulk)
1 onion chopped
1 small clove garlic minced
2 eggs
1 c dry bread crumbs
oregano, salt, paprika, pepper and parmesan cheese

Directions:
Directions:
Halve zucchini lengthways and hollow throughout. Chop up half of scooped out zucchini. Brown sausage meat and add onion, garlic and chopped zucchini. Drain this mixture. When it is browned, add eggs, bread crumbs and seasonings. Salt and season the zucchini shells. Stuff with the meat mixture. Place in baking dish with 1/2 inch of water. Bake for 1/2 hour at s350ºF. Sprinkle with parmesan cheese to serve. Makes a delicious vegetable dish out of one of the most hated vegetables.
