Apple Mincemeat Dumplings Recipe

4 tart apples peeled cored and finely chopped.
1/2 C. prepared mincemeat
1 t. grated lemon rind
5 T. granulated sugar
Pinch salt

Topping for pastry:
1 egg
1 T. milk
1 C. brown sugar
1 C. Water

Directions:
Mix filling ingredients together.
Using pastry for double crust pie, divide dough in half. roll each to 1/8 in. thickness. Trim each half to 12 inch square. Cut in 4 - 6 inch squares. Spread 1/2 cup filling into each pastry. Bring up corners. Pinch seams closed with fork. Refrigerate.

Preheat oven to 375º.
With small cookie cutters, cut decorative shapes from trimmings and arrange on dumplings.
In small cup, beat egg and milk. Brush on dumplings. Bake 13 x 9 inch pan for 20 minutes.

Combine in small pot, brown sugar, water and salt and simmer 10 minutes. Reduce oven to 350º Pour sauce into bottom baking dish. Bake 20 minutes or until dumplings are golden brown and sauce is thick. Make 8. Serve with Cool Whip or ice cream.
