2 10oz packages frozen chopped broccoli
1 cup shredded Cheddar cheese
1 cup mayonnaise
2 large eggs, lightly beaten
1 1/2 Tbsp salted butter
1 1/2 Tbsp all purpose flour
1 1/2 cups whole milk
1 Tbsp chopped sweet onion
1 sleeve Ritz crackers, crushed
2 Tbsp salted butter, cut into small pieces

Directions:
Directions:
Preheat the oven to 350F.
Butter a 3 quart casserole dish.
In a large bowl, mix together the broccoli, cheese, mayonnaise and the beaten eggs.
In a large sauté pan over medium heat, melt 1 1/2 Tbsp of the butter, whisk in the flour. Let cook for two minutes, or until foamy.
Slowly whisk in the milk until smooth.
Return to a boil, stir until thickened.
Remove from the heat and let cool slightly before stirring into the broccoli mixture.
Pour the broccoli mixture into the casserole dish and sprinkle with the crushed Ritz crackers.
Dot the top with 2 Tbsp butter.
Bake for 30 minutes at 350F.
Casserole should be bubbly and golden brown.
