1 package extra firm tofu
2 cans kidney or mixed chili beans, rinsed
1 green pepper/chopped
1 yellow onion/chopped
3 garlic cloves/ minced
3 T olive oil
1 small package frozen corn
2 zucchini chopped
1 14 oz.can of diced tomatoes (2 if you like your chili more tomatoey)
32 oz. vegetable stock or broth
3T chili powder
Cayenne pepper to taste
Cumin to taste
Paprika to taste
Salt and pepper to taste

I cut up or crumble tofu in a bowl and sprinkle red spices to taste on it and let it soak up the flavor first.
Sauté onion, green pepper, garlic and the tofu in the olive oil for about 5 minutes.
Add the rest of the ingredients including the chili powder, salt and pepper. Summer for about an hour.
