1 C Sugar
¼ C Cornstarch
¼ tsp Salt
1½ C Boiling Water
2 Egg Yolks
⅓ C Lemon Juice
1 Tbsp Lemon Rind
1 Tbsp Butter
Baked Pie Shell

Directions:
Directions:
Mix sugar, cornstarch, salt, and boiling water. Cook until smooth and thick. Cover and cook 15 minutes. Beat 2 egg yolks and pour hot mixture over, stirring constantly. Cook 5 minutes longer. Add ⅓ cup lemon juice, 1 tablespoon lemon rind, and 1 tablespoon butter. Cool. Pour into shell.
