1 lb ground turkey (lean) [may substitute mile loose italian pork sausage]
1 medium onion
1 green bell pepper
2-3 cloves garlic
2 T. olive oil
1 T. Italian seasoning blend
15 oz Ricotta Cheese (whole milk)
2 jars Marinara Sauce (Bertolli Organic Fire Roasted Garlic Marinara is my favorite)
1 c. shredded fancy parmesan cheese
1/2 cup chopped parsley, fresh (or 1/4 cup dried parsley)
2 eggs
no-cook lasagne noodles
1 cup boiling water

Directions:

Chop onion & green pepper, mince garlic and sauté all in 1 T. olive oil. Add Italian seasoning and set aside. Brown ground turkey in remaining olive oil. (use more oil if needed)
Combine veggies, meat, and 2 jars sauce in a bowl.
Mix together the ricotta cheese, eggs, parsley, and 1 cup of the parmesan cheese. Beat well.
Spray a 9x13 baking pan with oil spray.
Ladle about 3/4 cup of the sauce mix in the bottom of the pan, cover with 3 noodles laid side by side. Next top the noodles with 1/3 of the ricotta mixture. Repeat for two more layers. Top off a final layer with noodles and the rest of the sauce. Pour the boiling water around the edges of the stack. Cover with aluminum foil. Bake at 350 for 1 hour. Remove foil, top with remaining parmesan cheese and bake another 10 minutes or so until the cheese melts and browns a little. Let rest about 10 minutes before slicing. Freezes well if there is any left!

SERVE WITH CRUSTY GARLIC BREAD AND TOSSED SALAD WITH ITALIAN DRESSING!

for transparency sake i must admit this is the basic recipe from the back of the lasagna box! Bernardo (Bunny) really liked this when i made it for them. the most important ingredient is love, of course! Love you Bunny!

P.S. you can add a layer of fresh spinach leaves. Also, this can be made with finely chopped v=roasted vegetables instead of meat; try fresh mushrooms, carrots, spinach, and squash. Divine!
