1 Cup White wine (Chablis is best, but any dry white wine will work)
2 Cups V8 juice
2 Shallots, minced
1 Bay leaf
3 Cups Heavy cream
˝ Cup Butter (two sticks)
2 Tablespoons Fish base (See Champagne Sauce recipe)
1 Teaspoon White pepper
Kosher salt

Directions:
Directions:
In a medium saucepan, melt butter and add shallots. Cook for 30 seconds. Add in wine, V8 juice, heavy cream and fish base. Stir to combine. Add in bay leaf and white pepper. Let simmer under low heat until sauce thickens slightly, about 10-15 minutes. Add salt to taste. Remove bay leaf and discard. Serve with any grilled meat or fish.
