* Coconut oil cooking spray (I have also used small amount of avocado oil to grease casserole dish so raw spinach doesn't stick)

* 4-8 ounces Fresh/Raw spinach

* 1 pound breakfast sausage meat (ground turkey sausage is great, or can use any thawed/cooked/diced breakfast meat alternatives desired, such as diced sausage links, ham or Canadian bacon).

* 1 (10 ounce) bag of frozen, small cut sliced bell peppers. ( I also have had good results with leftover roasted red/yellow/orange bell peppers, or other roasted vegetables, or even a 10 ounce jar of roasted red peppers)

* 8 ounces raw sliced mushrooms (could also used canned and Drained)

*6 large eggs

* 1 1/2 cups egg whites (carton or fresh)

* 2 cups (8 ounces) grated cheese (sharp cheddar or mexican blend works well)

* 1/2 teaspoon Sea Salt (optional)

* 1/8 teaspoon black pepper

* Other fresh or dried herbs as desired (i.e. 1 teaspoon dried thyme)

1. Preheat the oven to 365 degrees F.
2. Spray baking dish with coconut oil or grease bottom and sides well with avocado oil.
3. Place the raw spinach in the greased baking dish.
4. Brown the sausage in a large skillet over high heat. Once browned, add the frozen sliced bell peppers (if using) and the raw mushrooms. Cook the veggies with the sausage until tender, adjusting heat as needed. Keep cooking on higher heat and toss ingredients until any liquid that develops from the veggies evaporates.
5. While the veggies are cooking with the sausage, whisk together the whole eggs, egg whites, 1 cup of cheese, salt and pepper in a bowl.
6. Pour the cooked sausage and veggies over the the raw spinach in the baking dish. Add the egg mixture, then sprinkle on the rest of the cheese.
7. Bake for 30 minutes.

This is an easy to make ahead casserole for large family breakfasts/brunches or use as multiple single servings. Also freezes well for grab and go future meals.
