1 cup dry gluten free oatmeal (regular or quick oats also work)

1/2 cup crunchy or regular peanut butter (I have also used almond butter with good results)

1/2 cup GROUND Flaxseed

1/3 cup honey

1 teaspoon vanilla

1/2 cup chocolate chips ( have also used dried cranraisins or regular raisins with good results)

Directions:
Directions:
*Mix all ingredients together.
*Roll into balls or use a round cookie scoop.
*Place on parchment paper and keep in airtight container.
*Chill in refrigerator for several hours or overnight.
*Keep in refrigerator 1-2 weeks, if they last that long!

(I usually double or triple recipe for larger number of energy bite snackers.)
