1-1/4 lbs of Idaho baking potatoes
1 tsp salt
1/2 cup bottled French dressing
3 large eggs, hardboiled and chopped
1 cup diced celery
1 cup sweet onion
3/4 cup sweet pickle relish (or chopped sweet gerkin pickles)
1-1/2 cups Miracle Whip
2 Tbs prepared mustard
Paprika

Cover potatoes in large saucepan in salted water. Bring to boiling and cook until fork tender, about 30 minutes. Drain. When cool enough o handle but still very warm, peel the potatoes and then cube. Place the warm potatoes in large bowl. Add the salt and French dressing, tossing to coat. (You can even let the potatoes sit in the fridge overnight at this point.)

To the potatoes add the celery, onion and pickle relish.

In small bowl, stir together the Miracle Whip and mustard. With a spatula, fold the MW mixture into the potato mixture until thoroughly blended. Add the eggs and gently stir just to evenly distribute. This is one of those dishes that is even better the next day (if you can wait that long!).

Place in a large pretty bowl and tap Paprika over the top to decorate.

The Holy Redeemer Women's Sodality would ask my Mom to make her famous potato salad for every big auditorium event! She would graciously make two large serving bowls. She would use the large clear plastic (quasi cut glass looking) bowls. The potato salad has the color of the French dressing running through it and then the Paprika on top! Presentation and great taste! Really hard to meet that standard.
