1 stick butter
1 medium onion, finely chopped
Fresh button mushrooms, washed and sliced
1 cup pearl barley
64 ozs beef broth

Directions:
Directions:
Cook barley according to package directions (to slightly undercooked since it will cook more in soup). Set aside.

Saute butter and onions in soup pot. Add beef broth/stock and mushrooms. Bring to a boil then simmer 20 minutes. Add cooked barley, salt and pepper to taste.
