2 Tbsp Canola Oil
2 Tbsp All-Purpose Flour
1 28 oz can Enchilada or Mexican Red Sauce
2 C Chicken Broth
1/2 Tsp Salt
1/2 Tsp Black Pepper

Meat
1 Lb ground Beef
1 medium Onion chopped
1/2 Tsp Salt

Filling
Canola Oil for frying
10 - 14 Corn Tortillas
1 4oz can Diced Green Chilies
1 C chopped Green Onions
1/2 C Chopped Black Olives
3 C grated Sharp Cheddar Cheese
Cilantro for Garnish

Directions:
1. Saucepan over medium-low heat combine Canola Oil and Flour. Whisk together and let bubble for 1 minute. Pour in Red Sauce, Chicken Broth, Salt and Pepper and bring to boil. Reduce heat and simmer while preparing other ingredients.
2. Brown the ground beef with onions in large skillet over medium-high heat and drain the fat. Add Salt and stir to combine, turn off heat and set aside.
3. Preheat oven to 350º. In small skillet over medium heat-heat small amount Canola Oil and lightly fry Tortilla until soft. Drain oil on paper lined plate, repeating until all are fried.
4. Spread 1/2 Cup of sauce in the bottom of 9-13 baking dish or pan. One at a time dip the Tortilla into the sauce. Place some meat mixture, Chilies, Green Onions and Black Olives. Top with Grated Cheddar and Roll up to contain filling.
5. Place tortilla seam side down in baking dish, repeat with rest of Tortillas and pour in remaining Sauce over the top. Complete with generous sprinkling of Cheese and other remaining Chilies, Green Onions, and Olives left over from filling.
6. Bake for 20 minutes or until bubbly, Sprinkle with chopped Cilantro over top and Serve
