Hummus:
1-15oz can chickpeas, drained, rinsed and reserve ¼ cup liquid
4 roasted garlic cloves, chopped
¼ cup olive oil
¼ cup tahini, stirred well
¼ cup grated parmesan cheese
¼ tsp cumin
2 tbsp lemon juice
¼ cup of the reserved chickpea water
salt to taste

Pita chips:
4 pitas
3 tbsp olive oil
½ tsp garlic powder
1 tsp lemon pepper
salt

Hummus:
Peel all skins off chickpeas. Place into a food processor and blend a high speed until somewhat mashed. Add chopped garlic, olive oil, tahini, parmesan, pepper, cumin, lemon juice.
Process until creamy for at least 1 minute. Add reserved chick pea juice and blend for one more min.
Spoon into a bowl and drizzle with additional olive oil.
Serve with pita chips or veggies. Will last up to 2 weeks in fridge.

Pita chips:
Preheat oven to 400º. Line a large baking sheet with parchment paper.
Cut each pita into 8 triangles and arrange on baking sheet.
In a small bowl, whisk the oil, garlic powder, lemon pepper together. Brush each pita with mixture. Flip and brush other side. Sprinkle lightly with salt. Bake for 10 minutes until brown and crispy. Cool before serving.
