WAFER PECAN PIE CRUST - SEE PASTRY CRUST SECTION.

2 EGG YOLKS
1 (3 OZ) PKG ORANGE GELATIN
2 CUPS ORANGE SODA
½ PINT (1 C) WHIPPING CREAM
2 EGG WHITES (ROOM TEMP)
¼ CUP SUGAR
MANDARIN ORANGE SLICES

Directions:
Drain mandarin orange slices for garnish. Prepare wafer pecan crust. Combine egg yolks and gelatin in medium sauce pan. Gradually add orange soda. Cook over moderate heat, stirring constantly until mixture reaches boiling point and gelatin dissolves. Refrigerate until thickened. Whip cream until stiff. Beat egg whites until foamy. Gradually add sugar to egg whites and beat until stiff. Fold ½ cup whipped cream into gelatin mixture. Fold egg whites into gelatin. Spoon mixture into crust and refrigerate overnight. To remaining whipped cream, beat in 1 tsp of powdered sugar and beat until stiff peaks form. Garnish pie with whipped cream and twisted oranges slices.
