4 large sweet carrots
8 - 10 small potatoes
1 green pepper
1 red pepper
3 - 4 celery stalks
1/2 tsp garlic powder
2 tsp crushed dried rosemary
1 Tbls dried marjoram
2 Tbls olive oil

Directions:
Directions:
Preheat oven to 375º.
Peel and halve carrots lengthwise; cut into 1 " sections.
Cut potatoes in half; cut into wedges.
Cut peppers and celery into 1" pieces.
Arrange vegetable in a large lightly oiled baking dish and toss with olive oil, garlic and herbs.
Cover tightly with foil and bake for 35 minutes.
Uncover and turn veggies with a large spoon. Add salt & pepper and roast at 425º for approximately 30 minutes or until carrots and potatoes are thoroughly cooked and edges of veggies are beginning to brown.
