1 CUP BUTTER
½ CUP POWDERED SUGAR, SIFTED
2 CUPS FLOUR
¼ TSP SALT

4 EGGS, SLIGHTLY BEATEN
2 CUPS SUGAR
RIND OF 1 LEMON
4 TBSP LEMON JUICE
¼ CUP FLOUR

Directions:
Preheat oven to 375º. Cut first 4 ingredients together with pastry blender or 2 knives. Press into a cookie sheet. Bake for 15 minutes. Mix other ingredients together with whisk and pour over crust. Bake again for 20-25 minutes. Cool for a few minutes, then sprinkle with powdered sugar. Cut into squares while warm.
