Ingredients: 1 Envelope unflavored Knox Gelatin 1 teaspoon INSTANT coffee crystals 3/4 cup cold water
1-8 ounce package cream cheese softened (can use regular or low fat) 1/2 cup sugar
1/4 cup flavored coffee liqueur (i.e. Kahlua)
1 cup heavy whipping cream
Shaved Ghirardelli 60% cacao or other baking chocolate bar for topping garnish (optional)
Serve mousse with fresh strawberries or red raspberries (optional)

Directions:1. Combine the Knox Gelatin, instant coffee crystals, and water in a small sauce pan. Dissolve and stir continuously over LOW heat. Remove pan from burner and COOL mixture to room temperature.
2. Beat cream cheese and sugar together with mixer.
3. Slowly blend together the coffee liqueur (Kahlua) with the cooled gelatin mixture and the cream cheese/sugar mixture. Mix well. Cover and place in refrigerator. Chill until mixture is partially set (consistency of unbeaten egg white).
4. Beat the heavy whipping cream to soft peaks. FOLD whipped cream into the partially set gelatin coffee/cream cheese/liqueur mixture using a hand whip.
6. Pour combined mixture into a jello mold, a bundt cake pan, a fancy serving bowl or individual custard cups. REFRIGERATE for 4 hours or OVERNIGHT.
7. Unmold fully set mousse (if in a mold/bundt pan) by dipping bottom of pan BRIEFLY in warm water and and carefully transferring to a chilled serving plate. Top chilled/unmolded mousse with SHAVED chocolate to taste. Serve with fresh berries, if desired.

Notes: This is a family holiday/special occasion favorite. If serving 8-12 people, I double the recipe. I have also quadrupled the recipe and served the mouse in a large crystal bowl for bigger events. Mousse keeps well for about a week in the refrigerator (if it lasts that long!) Enjoy!
