10 oz of flour
10 oz of sugar
4 large eggs
1 TBSP of vanilla extract
3 tsp of baking powder

Directions:
Directions:
Preheat oven to 375º F
Place all ingredients in a mixer and mix till smooth.
Grease a jelly roll pan, cover the bottom with wax paper and grease the wax paper.
Pour the mixed batter in the jelly roll pan and spread smooth.
bake 10-15 minutes or until golden brown on top.

Cake removal:
Place a towel on the counter, cover with wax paper (needs to be larger than the jelly roll pan)
Tip the cake out of the pan (pan face down on the wax paper and towel)
Carefully remove the wax paper from the bottom of the cake (usually comes off in strips)

Now with lemon tart or jelly spread evenly on to the bottom of the sponge cake.
Carefully roll the cake with the filling.
You can cut the ends to make it look better, sprinkle with powdered sugar.
