1/3 cup of sugar
3 TBSP of corn starch
1 TBSP of butter
1/2 cup of water
1/4 cup of lemon juice
1 egg yoke
1/2 tsp of lemon oil or lemon flavor (optional)

If you are using as a filling for the sponge cake, use an 1 extra TBSP of corn starch in the ingredients.

Mix sugar and corn starch
In a sauce pan using medium heat, melt butter, add water, lemon juice and yoke, stir
Add in dry mix whisking while you add it.
Heat till thickened, stirring constantly.
When thickened transfer the pudding to a bowl from the pot to stop from burning.
