Cake:
2 eggs
1 - 20 oz. can crushed pineapple - undrained.
2 C. flour
1 C. sugar
1/2 C. oil
1 C. brown sugar
2 tsp. baking soda
1 C chopped walnuts

Cream Cheese Ginger Frosting:
3 ox. softened cream cheese
1/4 C butter
1 tsp. vanilla
2 C powdered sugar
1/2 t. ground ginger

Directions:
Directions:
In large bowl, beat 2 eggs until light and fluffy. Add pineapple, flour, sugar, oil, brown sugar, soda and mix well by hand. Stir in chopped walnuts.
Spread into ungreased 13 x 9 inch pan. Bake 350º for 35 to 50 minutes.

Frosting:
Beat softened cream cheese, butter, vanilla with mixer. Add sugar, ground ginger and continue beating until creamy.
