Homemade Root Beer Recipe

Ingredients: 16 Quarts Water (6 for brewing and 10 for cooling) 1/8 inch licorice Stick or 6 Star anise 1 Cinnamon Stick 1 oz. sarsaparilla root 1 oz. sassafras root 1/4 c chopped raisins 1 oz. cherry bark (don’t use too much) ¼ oz. juniper berries (crushed)
Boil all of above for about 45 minutes to 1 hour
3 Lbs. honey ½ Tsp. salt ½ cup molasses 6 cups organic cane sugar 1 vanilla bean or 1 tsp. vanilla extract 1/8 tsp. nutmeg (be sure not to use too much)
Add above and boil for another 15-30 minutes
1 oz. dried wintergreen leaves (optional)
Boil for another 5 minutes or so
Strain and Add the cooling water (10 quarts)
¼ Tsp. Coopers brewing yeast or Ale yeast Proof the yeast in about ¼ cup of warm water
When the root beer is at room temperature (60 -95 degrees) add the yeast, Mix and bottle Makes approximately (28) 12 Oz bottles

Notes: The yeast will eat the sugar and create the carbonation, the honey is what sweetens the root beer. If you find this is too sweet, cut back on the honey.
