16 Quarts Water (6 for brewing and 10 for cooling)
1/8 inch licorice Stick or 6 Star anise
1 Cinnamon Stick
1 oz. sarsaparilla root
1 oz. sassafras root
1/4 c chopped raisins
1 oz. cherry bark (don’t use too much)
¼ oz. juniper berries (crushed)

Boil all of above for about 45 minutes to 1 hour

3 Lbs. honey
½ Tsp. salt
½ cup molasses
6 cups organic cane sugar
1 vanilla bean or 1 tsp. vanilla extract
1/8 tsp. nutmeg (be sure not to use too much)

Add above and boil for another 15-30 minutes

1 oz. dried wintergreen leaves (optional)

Boil for another 5 minutes or so

Strain and Add the cooling water (10 quarts)

¼ Tsp. Coopers brewing yeast or Ale yeast
Proof the yeast in about ¼ cup of warm water

When the root beer is at room temperature (60 -95 degrees) add the yeast, Mix and bottle
Makes approximately (28) 12 Oz bottles

The yeast will eat the sugar and create the carbonation, the honey is what sweetens the root beer. If you find this is too sweet, cut back on the honey.
