4 MEDIUM SWEET POTATOES
½ Cup BUTTER OR MARGARINE
½ Cup FIRMLY PACKED BROWN SUGAR
¼ TSP SALT
MARSHMALLOWS - MINI OR REGULAR

Directions:
Directions:
Place rinsed potatoes in medium saucepan and cover with water. Bring to boil and simmer until knife tender. Drain and immerse in cold water. When cooled, remove skin with a paring knife and cut into bite size chunks and place into shallow casserole.


Preheat oven to 350º.


Cut butter into chunks and disperse over potatoes. Sprinkle brown sugar and salt on top. Bake, uncovered, 20 to 30 minutes or until glazed and heated through.


Remove from oven and cover top with marshmallows. Turn oven up to 400º and return dish to oven about 8 to 10" from the heat source. Watch carefully. Remove when golden brown.


A ½ cup maple syrup may be substituted for brown sugar.


Variations: add ½ c crushed pineapple; cinnamon or nutmeg; ¼ c cranberry sauce; ¼ c orange juice.
