Cheesy Egg Nests with Brussels Sprouts Recipe

Ingredients: 2 Tsp Oil 1 small onion, thinly sliced 4 cups raw Brussels sprouts cut in fourths 2 T water 1/4 tsp pepper 1/8 tsp salt 1 oz Parmesan cheese, grated (about 1/4 cup) 2 large eggs 1 T mayonnaise 1 tsp hot sauce

Directions:Heat oil in large skillet over medium high heat. Add onion, cook stirring constantly for 15 seconds. Stir in Brussels sprouts. Drizzle with water and cook 2 minutes, Uncover pan, stir in pepper and alt. Reduce heat to medium. Divide sprouts mixture in half, shaping each into about a 5-inch circle in pan. Sprinkle cheese evenly over top and make a well in middle of each circle. Crack 1 egg into each well. Cover pan; cook 3 minutes or until eggs reach desired degree of doneness Meanwhile combine mayonnaise and hot sauce, stirring well. Stir in water as necessary to make the mixture runny. Using a large flat spatula, lift each Brussels sprouts next onto place. Drizzle evenly with sauce.
If you are doing multiple servings simply put Brussels sprouts into pans, make nests as above and bake until done. Really yummy and easy. |

Basically, just a potato soup with horseradish added, and a few croutons
