1 (5 pound) pork butt roast bone-in
2 cups white vinegar
1 cup butter, melted
2 tablespoons salt
2 tablespoons liquid smoke
2 tablespoons crushed red pepper flakes
1 tablespoon hot sauce
1 tablespoon ground black pepper
2 tablespoons white sugar
1 jalapeno peppers chopped
1 cup beef stock

Put the pork butt in a slow cooker trimmed of excess fat. Add 1/2 of the remaining ingredients except add all the beef stock and the jalapeno. Cover and cook on high for 4 - 5 hours until the bone comes out easily. In the mean time mix together the remaining ingredients and bring to a simmer while whisking. Simmer until reduced by a third. After cooking remove the pork and shred for sandwiches soaked with the cooled sauce. Serve on a soft bun with Cole Slaw and hot sauce on the side.

Pierce's Pitt BBQ sits on a frontage road parallel to I-64 near exit 238 close to Williamsburg, Va. Every day the huge BBQ house billows smoke onto I-64 smoking up ribs, chicken and pork butt. On a busy summer day, 6,000 pounds of pork butt are smoked. That's a lot of butt. Truck drivers used to stop on I-64 and hop the fence to get lunch. Lines frequently go out the door. And for good reason.

The star of the show is the pulled pork sandwich, splashed with their signature vinegar sauce topped with homemade Cole slaw on a soft bun. Consistently, Pierce's is voted to the Top 5 BBQ's in the South, therefore the World.

I can't compete with that.....but this recipe isn't too bad.
