2 lb. potatoes (about 6 medium)
1 egg
⅓ c. finely chopped onion
3 tbsp flour
1 tsp. salt
¼ c. margarine or butter

Directions:
Directions:
Prepare potatoes by peeling and cutting potatoes into quarters. Boil in water (with ½ tsp. salt to 1 c. water) for 20-35 minutes or until cooked, but not too soft. Shred enough to measure 4 cups. Drain completely.
Beat egg in small mixer bowl until thick and lemon colored. Mix in potatoes, onion, flour and salt. Heat margarine or butter in 12 inch skillet over low heat until melted. Shape potato mixture into 8 patties; place in skillet. Cook over medium heat, turning once, until golden brown, about 5 minutes.
