3 C. sifted cake flour
3 t. baking powder
1/2 t. salt
1 C. egg whites (about 8)
2 C sugar
2 sticks butter - softened
1/2 t. vinegar
1 t. vanilla
1 C. milk
1 package 7 oz. coconut.

Directions:
Sift together: Flour, baking powder and salt - set aside.
Beat egg whites with mixer until foamy. Beat in vinegar - add 1 cup sugar - 1 T. at a time until meringue has soft peeks. Beat butter in large bowl until creamy. Beat in remaining 1 C sugar and vanilla. Add dry ingredients, alternately with milk. Stirring between each addition until smooth. Carefully fold in meringue. Pour into prepared 2 - 9 inch pans. Bake 350º for 30 minutes. Cool iin pan on wire racks for 5 minutes. Remove from pan. Peel off waxed paper and cool completely.

Spread boiled white icing between layers and on top and side of cake. Sprinkle generously with coconut.
