Banana Nut Cake Recipe

3/4 C. shortening
1½ C. sugar
2 eggs
3/4 C. mashed bananas (1)
1 tsp vanilla
1 ¾ C. Flour
1 tsp soda
1 tsp baking powder
1/2 tsp salt
2/3 C Buttermilk or sour milk
1/2 C walnuts or pecans

Creamy Nut filling:
1/2 C. Brown sugar
2 T flour
1/2 C. evaporated milk
2 T margarine
1/2 C walnuts
1/2 t vanilla and salt

Frosting:
1 egg white
1/2 C. shortening
1 tsp vanilla.
2 C. sugar

Directions:
Directions:
Mix shortening and sugar on high speed until fluffy. Add eggs and beat. Add mashed banana and vanilla.
In a separate bowl, stir together the flour, baking powder, soda and salt. Add to creamed mixture. Add buttermilk. Stir in nuts. Pour into 2 - 9 in. cake pans.

Bake 375º oven for 25 minutes. Cool layers in pan 10 minutes. Invert on rack.

Prepare Creamy nut filling:
Stir together 1/2 C. brown sugar and 2 T flour, stir in evaporated milk and add 2 tab. margarine. Cook stirring constantly until mixture is bubbly. Remove from heat. Stir in 1/2 C walnuts, vanilla and salt. Chill 1 to 2 hours.

Frosting:
In bowl beat 1 egg white, 1/2 C shortening 1 tsp vanilla. Beat until well blended. Gradually add two cups sugar.

Assembly:
Prepare frosting. Spread all creamy nut filling over cake layer. Top with 2nd layer. Frost top and sides with frosting.
