1 ½ c. ripe avocado (but now brown)
1 c. coconut sugar or brown sugar, or ½ c. honey
2 eggs
¾ c. cocoa powder (or 1 c. cocoa powder and increase sugar to 1 ⅓ c.)
100 g. dark chocolate
1 tbsp. water
½ tsp. baking soda
1 tbsp. vanilla extra
½ - ¾ c. white chocolate chunks
Skor bar bits for sprinkling on top (optional)

1) Preheat oven too 350F.

2) In a stand mixer with whipping attachment, mix together avocado, sugar/honey until smooth. Beat in the eggs.

3) Mix in the cocoa powder.

4) In a food processor grind the chocolate until fine (no lumps bigger than a small pea). Mix "chocolate flour" with the batter.

5) In a small bowl, dissolve the baking soda in water and add to the dough. Mix well. Stir in white chocolate chunks.

6) Pour the batter into a buttered square pan and bake for approx. 20 minutes.

7) Cool down outside the oven, then cover and let cool in the fridge for at least 2 hours. The brownies become better the longer they sit in the fridge.
