2 onions, chopped
8 sm. potatoes, cubed
5 garlic cloves, chopped
3 qt. water
1 1/2 tsp. salt
1/4 c. guascas
1/4 c. capers opt.
1/2 tsp. ground bayleaf
1/4 tsp. thyme
4 c. corn
juice of one lime
fresh cilantro
avocado

Directions:
Directions:
Cook potatoes, onions, and garlic in water with seasonings until onions are translucent. We use capers packed in salt to avoid vinegar. Just make sure to rinse all the salt off before using. The guascas is a Latin American herb that you may find in a Latino grocery store or order online. You may omit it, but you will be missing a unique flavor. Add the corn and cook several minutes. Finally, add the lime juice. Garnish your bowl with fresh cilantro and avocado.
