1 1/2 c flour
1/2 tsp soda
1/2 tsp salt
3/4 c brown sugar, packed
1/2 c buttermilk
1/3 c oil
1 egg
1 tsp vanilla
Rhubarb
Nuts (optional)

Directions:
Directions:
Combine flour, soda and salt. Combine sugar, buttermilk, oil, egg and vanilla. Add liquid mixture to dry ingredients; stir until just moistened. Stir in 1 cup finely chopped rhubarb and 1/4 cut chopped nuts (optional). Spoon into muffin tins. Bake 30 minutes at 325 degrees.
