½ cup unsalted butter
½ cup sugar
1 egg
1 tsp vanilla
2 cups all purpose flour
1 tsp baking powder
⅓ cup raspberry or strawberry jam

Icing
1 cup icing sugar
¼ tsp vanilla
1 tbsp hot water
6 candied cherries, quartered

Directions:
Directions:
In a large bowl, beat butter with sugar until fluffy; beat in egg and vanilla.
In a separate bowl, whisk flour with baking powder; stir in the butter mixture.
On a lightly floured surface, roll our dough to ⅛" thickness.
Using a 1½" - 1¾" round cutter, cut out shapes.
Place 2" apart on an un-greased, rimless baking sheet. Bake in the centre rack at 350º for about 10 minutes or until the edges are slightly golden.
Transfer to cooling rack and let cool completely.
Spread the bottom half of the cookie with jam and top with remaining cookie.

Icing:
In a small bowl, combine icing sugar, vanilla and enough hot water to make thin icing; spread over the tops of the cookies.
Top each cookie with a cherry piece.
Let stand until the icing is dry- about 3 hours.

Note: Layer with waxed paper in an airtight container and can store up to 2 weeks
