3 cups rhubarb
8 tab water-divided
8 tsp cornstarch
1 cup coconut
1/2 cup melted butter
2 cups brown sugar-divided
2 tsp lemon juice
2 cups oatmeal
1 tsp salt

Directions:
Directions:
In saucepan, combine rhubarb, 1 cup only of brown sugar, 6 tab water only and lemon juice to boil
then reduce heat until rhubarb is tender.
Pre-heat oven to 350
Mix 2 tab water and corn starch. Stir in Rhubarb mixture when it is done. Cook 2 min or until thick
Set Aside
Combine oats, flour, coconut, salt and remaining brown sugar. Stir in butter until crumbly
Press 1/2 mixture onto a greased 9x13 pan. Put Rhubarb mixture on next.
Top with remaining oatmeal mixture
Bake 350 degrees 30 minutes or until browned.
