Mayonnaise
Olive Oil
Dijon Mustard
Lemon Pepper
Old Bay Seasoning
Salmon (or any other fish)

Directions:
Directions:
For salmon, I use Mayonnaise and Lemon Pepper. I do two pieces and coat the fish in olive oil. Using about 1/2 C mayo and a squirt of two (to taste) of mustard, I spread it on top of the fish that is skin side down in baking dish. I then sprinkle with lemon pepper. Bake 30 minutes at 400º F or until flaky and slightly browned.

Of course, for other fish I may add more mustard or change from lemon pepper to Old Bay Seasoning.

Personal Notes:
From Chris. There are several variations to this. Amanda Donnelly introduced me to the concept when I was working for her and I adapted it to my own tastes.
