2 sweet potatoes

Preheat oven to 225º F
Line sheet pan with parchment paper

Wash and peel sweet potatoes, removing any bad spots
Cut sweet potatoes lengthwise into 1/4" to 1/2" slices
Place cut sweet potatoes on lined sheet pan in a single layer
Sprinkle with cinnamon

Cook for 2 hours
Take out of oven and flip sweet potatoes over for even baking
Cook an additional 2 hours
When done, do not take out of oven, simply turn oven off and let cool overnight in the oven
