11/2 honeycomb tripe
1/2 c olive oil
1 med onion chopped
2 cloves garlic minced
1/2 c dry white wine
1tbsp basil
2 tbsp minced parsley
Salt & fresh ground black pepper
1 3/4 c chopped seeded tomatoes
2 tbsp Tom paste
1 bunch broccoli

Directions:
Directions:

Soak tripe in salted cold water for 1 hour. Drain remove all excess fat from smooth side of tripe. Cut into strips 1/4 in wide and about 2 inches long wipe dry w/ paper towel. Put 1/2 of olive oil in wide pot & heat. Add tripe and cook turning often until liquid evaporates. Add onion & garlic. Lower heat & cook for 3-4 min. Add wine, basil, parsley and salt and pepper to taste. Cover and simmer for about 5 min
Preheat oven to 450*
Place tomatoes & paste in ovenproof casserole pan cook over high heat. When Tom come to a boil add tripe mixture. Cover casserole pan. Bake for 10 min lower heat to 400* bake for 1 hour
Blanch broccoli drain & add to tripe. Lower heat to 350* add rest of olive oil and cook 15 to 20 min more . Serve hot with or without rice. Sprinkle w/grated cheese.
