2 TBSP BUTTER OR MARGARINE
⅓ CUP FLOUR
1 ½ TSP SALT
½ TSP PAPRIKA
⅛ TSP PEPPER
2 ½ TO 3# FRYING CHICKEN, CUT UP OR QUARTERED
¼ TSP CINNAMON
¼ TSP NUTMEG
1 TSP LEMON JUICE
1 TBSP HONEY OR BROWN SUGAR
1 ⅓ CUPS (1# CAN) DRAINED FRUIT COCKTAIL
(RESERVE ½ CUP SYRUP)

Directions:
Preheat oven to 375º. In ziploc bag, combine flour, salt, paprika and pepper. Shake chicken, a few pieces at a time in flour mixture. Arrange chicken in pan, dipping in butter and placing skin-side-up. Combine remaining ingredients except fruit cocktail; pour over chicken pieces. Bake 50 minutes, basting occasionally with sauce. Pour drained fruit cocktail over chicken; sprinkle with addition cinnamon, if desired. Continue baking 15 to 20 minutes or until chicken is tender.


Serve with rice and choice of veggie.


Other fruits may be used for fruit cocktail.
