2 LARGE CHICKEN BREASTS (ABOUT 1 ½ # TOTAL)
2 TBSP OIL
3 CUPS FROZEN BROCCOLI SPEARS
1 CAN CREAM OF MUSHROOM SOUP
¼ CUP MAYONNAISE OR SALAD DRESSING
1 TSP LEMON JUICE
½ CUP DRY BREAD CRUMBS (OPTIONAL)
1 TABLESPOON BUTTER OR MARGARINE, MELTED (OPTIONAL WITH BREAD)
¼ TSP CURRY POWDER (OR MORE TO TASTE)

Preheat oven to 350º. Cook broccoli as directed on package.


Cut chicken breast into bite size pieces. Put oil in large fry pan and heat over medium heat. When heated, carefully add chicken and brown until chicken is cooked.


Arrange chicken down the middle of a casserole dish with broccoli on each side of the chicken. Combine soup, mayonnaise, lemon juice and curry powder in medium bowl. Pour over chicken and broccoli. If desired, combine bread crumbs and butter and sprinkle over the top. Bake, uncovered for 30 to 40 minutes or until heated through.


Serve with pasta.
