1 CUP SUGAR
¼ CUP CORN STARCH
½ TSP SALT
1 ⅔ CUPS WATER
3 EGG YOLKS
2 TBSP BUTTER OR MARGARINE
⅓ CUP FRESH LEMON JUICE

Directions:
Prepare and bake a 9" single crust pastry. Let cool completely.


In medium saucepan, combine sugar with cornstarch and salt. Stir in water, blending until smooth. Cook over medium heat until mixture boils, stirring constantly with flat bottomed whisk. Boil 1 minute. Remove from heat. Gradually blend about 1/2 cup of hot mixture into egg yolks. Return to sauce pan, mixing well. Cook just until mixture starts to bubble, stirring constantly. Remove from heat. Stir in butter and lemon juice. Pour into pie crust and cover with plastic wrap while preparing meringue.


Prepare meringue as directed in pies and pastry section. Bake as directed.
