1 1/2 c. celery
4 c. sliced carrots
8 c. cubed potatoes
3-4 qt. water
1- 2.5 oz. pkg. Ham-Not! (Dixie Diner) (opt.)
1 Tbsp. salt
2 Tbsp. onion powder
1 Tbsp. garlic powder
1/2 tsp. rosemary
1/2 tsp. dill weed
2 Tbsp. lemon juice

Directions:
Cook onion, celery, and two quarts of water with two cups of carrots and two cups of potatoes. Cook the rest of the potatoes and carrots separately with more of the water. Add seasonings and Ham-Not to the mixed vegetables. When potatoes and carrots that are separate are fully cooked, blend in the blender with potato cooking water until very smooth. You probably need to blend in two batches, because it will overkill the blender. Add oil and lemon juice and blend a little more. Add the blended sauce to the soup. Add a little more water if too thick for you.
