Seasoning Mix:

1 tbsp. Salt
1½ tsp. onion powder
1½ tsp. garlic powder
1½ tsp. cayenne powder
1 tsp. white pepper
1 tsp. paprika
1 tsp. black pepper
½ tsp. dry mustard
½ tsp. dried thyme
½ tsp. filé powder

Combine above ingredients, mix well and store in airtight jar for future use.

Main Ingredients:

½ cup chopped onions
½ cup chopped celery
¼ cup chopped bell pepper
1 tsp. minced garlic
7 tbsp. vegetable oil
2lbs. #7 steaks or veal cutlets cut into portions
1 cup all purpose flour
4 bay leaves
2 cups beef stock
1 cup canned tomatoes

Season both sides of meat with seasoning mix. In a large heavy skillet, heat oil. Combine flour (½ cup) with 1 tsp. of seasoning mix. Dredge meat in seasoned flour. Brown meat in hot oil until golden brown, 1-3 minutes per side. Transfer meat to a plate. Gradually add remaining flour to pan and stir constantly until medium brown, about 3 minutes. Add vegetable mixture and stir until well blended, stir in bay leaves and 1 tbsp. seasoning, mix. Continue cooking for 5 minutes, stirring almost constantly. Serve over cooked grits.
