butter = when cooking or frying, avocado oil or MCT oil. When baking use melted coconut oil, cup for cup

eggs = when baking, use chia or flax eggs (1 T chia or flax and 3 T water, let sit for about 5 minutes. This is 1 egg).

flour = for baking: 1 c regular = 3/4 c almond + 2 T coconut flour. Add baking soda and powder per recipe + pinch of salt if recipe calls for baking powder or soda. For gravy or roux: use 1 to 1 ratio of arrowroot flour or corn starch.

sugar = if recipe calls for granulated, brown, white or coconut sugar and you replace it with stevia, cut down on the liquid that the recipe calls for. If the recipe calls for a sticky sweetener like maple syrup or honey, cut down on some of the dry ingredients so the recipe isn't too dry. This will not work if it is frosting.

Frosting: Instead use 1 c soaked cashews and 1/4 c almond milk and 1/4 t stevia for frosting. You can flavor it with zest, vanilla or almond extract
