1 cup uncooked long grain rice
2 eggs, slightly beaten
1/2 cup plus 2 tbsp grated Parmesan cheese (divided)
2 cups shredded mozzarella cheese
1/2 cup cottage cheese
1 lb lean ground beef
1 jar (15 1/2 oz) spaghetti sauce)

Directions:
Directions:
Cook rice according to package directions. Cool slightly. Add eggs and 1/4 cup Parmesan cheese. Mix thoroughly. Set aside. Combine cheeses, reserving 2 Tbsp of Parmesan cheese. Mix well. Brown meat, drain off excess fat. Add spaghetti sauce, and continue cooking until thoroughly heated. Spoon 1/2 of rice mixture into 3 quart casserole dish. Cover with 1/2 of cheese mixture. Top with 1/2 cup of meat sauce. Repeat ayers. Top with remaining 2 Tbsp Parmesan cheese. Bake at 375 degrees for 15-20 minutes or until thoroughly heated.
