1 cup long grained rice
2 1/2 cups boiling water
1 tsp salt
2 strips bacon
1 medium green pepper
chopped onion
1 can (#2 1/2) stewed tomatoes
1 can tomato soup
1-2 tbsp sharp cheese
buttered crumbs

Directions:
Directions:
Place rice in boiling water. Add salt. Fry bacon, cut in pieces. Remove bacon and fry green pepper (chopped) in bacon fat, also chopped onion. Add rice when done to the green pepper and onion. Add stewed tomatoes and soup. Blend all. Add 1-2 tbsp of small pieces of sharp cheese. Pour mixture in 2 qt casserole. Sprinkle with bacon pieces over the mixture. Cover with buttered crumbs and bake 350 until piping hot

This is tangy, flavorful and filling and with a juicy piece of apple pie, a gelatin salad - a very satisfying meal.
