Mushroom Rice Pilaf Recipe

1½ cup Long grain rice
6 tbsp Butter
¼ cup Onion, diced
½ cup Bacon, diced
1½ cup Mushrooms, sliced and sautéd in the fat from the bacon
3½ cup Hot beef stock
1 tsp Salt
½ tsp Pepper
2 tsp Lemon juice

Directions:
Directions:
Rinse rice in cold water to remove excess starch. Heat butter in a large skillet. Add onion and bacon and cook until lightly browned. Add rice and sauté until rice starts to brown. Add the mushrooms, salt, pepper and lemon juice. Cook 2 minutes. Transfer to casserole and add hot stock. Cover and bake at 350º for 25 minutes or until the rice is soft.
