3 Pounds Small red potatoes
1 Small onion, diced
3 Celery ribs, diced
6 Slices of bacon
1 Cup Mayonnaise
1 Cup Sour cream
1 Teaspoon Dijon mustard
1 Tablespoon Olive oil
2 Teaspoons Apple cider vinegar
¼ Cup Flat-leaf parsley, chopped
2 Tablespoons Fresh dill, chopped
2 Green Onions, chopped
Salt and pepper

Directions:
Directions:
Place potatoes in a pot of cold salted water and bring to a boil. Reduce to simmer and cook for 15 minutes or until fork tender. Drain the potatoes and run under cold water to cool.

Chop the bacon and cook until crisp. Drain the bacon on a paper towel. Discard the grease. Cook the onion and celery in one tablespoon of olive oil just until tender.

In a large bowl, combine the mayo, sour cream vinegar mustard, bacon, onion, celery, parsley green onion, and dill. Stir to combine. Cut the potatoes into bite-size pieces and add to the bowl. Stir to combine. Taste the potato salad and add salt and pepper to taste. Chill before serving.
