2 Sticks of Unsalted Butter softened
2 ½C Sugar Divided
4 Eggs
⅓ C Grated Lemon Zest ( 6-8 lemons)
3 C. Flour
½ tsp Baking Powder
½ tsp Baking Soda
1 tsp Salt
¾ C Freshly squeezed Lemon Juice
¾C. Buttermilk - room temp
1 tsp. Vanilla

Preheat oven to 350º

Cream the butter and 2 C of the sugar for approx. 5 min. Add lemon zest and mix well to combine. Add the eggs one at a time and beating well after each to incorporate well. In a small bowl whisk the Flour, Baking powder, Baking Soda and Salt and set aside. In another small bowl, mix the buttermilk, lemon juice, and vanilla. Alternate adding this and the dry ingredients to the butter/sugar mixture, beginning and ending with the flour mixture.
Fill baking cups a little over 2/3 full of batter and bake 15 + min. Cool before frosting
