2 1/4 c. sugar
3 1/3 c. all-purpose flour
2 tsp baking soda
2 tsp ground cinnamon
1 tsp salt
1 tsp baking powder
3/4 tsp ground cloves
1/2 tsp ground nutmeg
4 eggs
1 can (15 ounces) solid-pack pumpkin
1 c. buttermilk (I used the dry mix plus water)
1/2 c. unsweetened applesauce
1/3 c. canola oil

Directions:
Directions:
In a large bowl, combine the first eight ingredients. In another bowl, whisk the eggs, pumpkin, buttermilk, applesauce and oil. Stir into dry ingredients just until moistened.
Transfer to two 9-in. x 5-in. loaf pans coated with cooking spray. Bake at 350° for 45-55 minutes or until golden brown and a toothpick inserted near the center comes out with moist crumbs. Cool for 10 minutes before removing from pans to wire racks. Yield: 2 loaves (16 slices each).
