3 CUPS GRANULATED SUGAR
1 CUP WHITE CORN SYRUP
½ CUP WATER
2 EGG WHITES (ROOM TEMP)
1 TSP VANILLA
CHOPPED NUTS (OPTIONAL)

Directions:
Combine sugar, corn syrup and water in heavy saucepan. Bring to a boil over medium heat, stirring constantly. Stirring occasionally, boil until syrup spins a long thread when tested with a spoon or cook to hard ball stage in cold water test.


During last few minutes of cooking, beat egg whites until very stiff. While mixer is running, slowly pour syrup over egg whites. Beat until mixture begins to thicken and lose its gloss. Add 1 tsp vanilla. Nuts or candied cherries may be added.


Candy can either be spread in a 9x13" buttered pan or dropped by teaspoonful onto waxed paper.

Divinity should be made when the humidity is about 45% or lower. It doesn't do well in high humidity.
Try to use eggs as fresh as you can get them. Large ranch eggs are ideal. Room temperature egg whites produce higher volume.
